Dr Qing-An Zhang is an associate professor in the Research Center of Fruit and Vegetable Deep-processing Technology; SchoolofFood Engineeringand Nutrition Science at the  ShaanXi Normal University (SNNU),ShaanXiProvince, PR China. He graduated from Henan Inistitute of Science and Technology in 1999, then further studied as a Master inShaanXiNormalUniversityand received his M.Eng. in 2002, and obtained a PhD degree in applied chemistry fromShaanxiNormalUniversityin 2010. Thereafter, Dr Qing-An joined the University College Dublin (UCD), Ireland National University in 2011 as a postdoctoral researcher under the guidance of Prof. Da-Wen Sun for two years, worked on the project of Novel method for assisting and accelerating the aging process of wine funded by the European Commission.

  After obtaining his master degree in 2002, Dr Qing-An works in theSchoolofFood Engineeringand Nutrition Science of SNNU as a teacher. The courses he taught include Food Analysis and Inpection, Food Safety and Control, Food Nutriology, Food Laws and Standards. Now his research interests focus on quality change and control of food during processing, especially the emerging inovative processing technology, such as ultrasound and mircowave. To be specific, his group is working on the browning and its efficient control of fruits (for example apricot, almond and walnut) by physical techniques during unit operations, and the mechanism of wine ageing accelerated by ultrasound is also his enthusiasm, he has proposed a route based on the oxidation reactions initiated by free radicals generated from the instant high pressure and temperature to understand it.

  Dr. Qing-An’s research has been funded by National Science Foundation of China (NSFC), Natural Science Foundation of Shaanxi Province of China, and the Fundamental Research Funds for the Central Universities of China. In addition, he has also taken on five projects funded by the small and medium-sized food enterprises. He has published over 70 journal articles and co-edited 10 book chapters
